1.鹌鹑蛋放清水冲洗干净表面。

2.锅中加水漠过鹌鹑蛋加一勺食盐煮八分钟左右。

3.捞出放冷水里面浸泡一会。

4.倒掉水份,盖上锅盖来回摇晃十几下。

5.将鹌鹑蛋壳摇软,摇破更好剥壳。

6.剥好的鹌鹑蛋用清水冲洗干净表面残留的蛋壳,放厨房纸上吸干水份。

7.打散打匀两个鹌鹑蛋,将龙须面稍微沾点蛋液,让面条变得柔软些。

8.取一根面条在手上绕几圈。

9.将面条固定再鹌鹑蛋顶端,然后顺着面条圈绕。

10.一根绕完接着绕下一根,将接头处压紧,全部绕好。

11.炸锅放适量食用油烧五成热,放入绕好面条的鹌鹑蛋。

12.炸至表面微黄捞出沥干油。

13.大火再次放入鹌鹑蛋复炸,炸至表面金黄捞出沥干油。

炸的时候要小心,不能炸太长时间,否则鹌鹑蛋容易在油锅中爆裂。
